St Blaise is a Croatian restaurant with its heart in Dubrovnik and its roots in the Dalmatian coast. We cook the food we grew up with, carrying our family recipes and traditions to your table in Sydney.
For Dubrovnik-born chef Vedran Perojević, that means the kitchens, fishing villages and family tables of Croatia’s Adriatic coast. Olive oil, garlic, wine and seafood. Recipes passed down through generations, brought to life with exceptional Australian produce.
Some dishes take hours. Others take patience, skill and a little stubbornness. All of them belong around a table, with good company and another piece of bread.
